Lowfat molasses cookies

Ingredients:
3/4 cupRaisins
1/3 cupWater, hot
1 cupSugar
1/4 cupMolasses
1 ea Egg // or 2 egg whites
2 1/4 cupFlour
2 tspBaking soda
1 tspCinnamon
1 tspGinger
1/2 tspCloves
1/4 tspSalt
1/4 cupSugar
Procedures:
1Calories per serving: 45 fat grams per serving: 0 approx. cook time: 12 cholesterol per serving: 4mg in a food processor bowl with a metal blade, combine raisins and hot water.
2Cover; process 2 to 3 minutes or until pureed.
3In a large bowl, combine raisin mixture, 1 cup sugar, molasses and egg; blend well.
4Lightly spoon flour into measuring cup; level off.
5Stir in flour, baking soda, cinnamon, ginger, cloves and salt; mix well.
6Cover with plastic wrap; refrigerate 2 to 3 hours for easier handling.
7heat oven to 350°F.
8Shape dough into 1-inch balls; roll in ?cup sugar.
9Place 2 inches apart on ungreased cookie sheets.
10Bake at 350f for 8 to 12 minutes or until set.
11Cool 1 minute; remove from cookie sheets.
12high altitude - above 3500°Feet: decrease sugar to ?cup.
13Bake as directed.
14note: i keep my hands slightly wet when shaping cookies so the dough doesn"t stick to my hands.
