| 1 | Recipe by: betty crocker"s cookbook heat oven to 300 degrees. | | 2 | Grease cookie sheet lightly. | | 3 | Beat egg whites, cream of tartar and salt in medium bowl until foamy. | | 4 | Beat in sugar, 1 tablespoon at a time. | | 5 | Continue beating until stiff and glossy. | | 6 | Do not underbeat. | | 7 | Fold in peppermint extract, coconut and chocolate chips. | | 8 | Drop mixture by teaspoonfuls about 1 inch apart onto cookie sheet. | | 9 | Place a chocolate chip on each cookie. | | 10 | Bake 20 to 25 minutes or just until edges are light brown. | | 11 | Cool 10 minutes; remove from cookie sheet. | | 12 | 3-?to 4 dozen cookies; 55 calories per cookie. |
