New orleans beignet doughnuts

Ingredients:
1 packActive dry yeast
1 1/2 cupWarm Water (105 deg. f.)
1/2 cupSugar
1 tspSalt
2 eachEggs
1 cupEvaporated milk
7 cupSifted all-purpose flour
1/4 cupSoft shortening
1 xOil for frying
Procedures:
1In large bowl, sprinkle yeast over water; stir to dissolve.
2Add sugar, salt, eggs and milk.
3Blend with rotary beater.
4Add 4 cups of the flour; beat smooth.
5Add shortening; beat in remaining flour.
6Cover and chill several hours.
7Deep fry at 360 degrees 2 to 3 mintues or until lightly browned on each side.
8(if beignets don"t rise to the top immediately when you drop them into the oil, the oil isn"t hot enough).
9Drain on paper towels.
10Sprinkle heavily with confectioners" sugar.
