Oatmeal-raisin cookies

Ingredients:
1 cupFlour, all purpose PLUS
2 tbspFlour, all purpose
4 1/2 ozOats, uncooked quick OR
Old-fashioned
1 tspSalt
1/2 tspBaking soda
1/4 tspCinnamon, ground
1/2 cupSugar, dark brown, firmly
Packed
1/2 cupApple juice, thawed frozen
Concentrate (no sugar added)
1/4 cupOil, vegetable
1 tspVanilla extract
3/4 cupRaisins, dark
2 Egg whites (at room temp)
1/8 tspCream of tartar
Procedures:
1In medium mixing bowl combine flour, oats, salt, baking soda, and cinnamon; set aside.
2Using electric mixer, in small mixing bowl beat together sugar, juice, oil, and vanilla; add to oat mixture and mix well.
3Stir in raisins and set aside.
4Preheat oven to 375 degreesf.
5Using clean beaters in separate medium mixing bowl beat egg whites at low speed until foamy; add cream of tartar and continue beating until soft peaks form.
6Fold beaten whites into oatmeal mixture.
7Spray nonstick cookie sheet with non-stick cooking spray; drop batter by heaping teaspoonfuls onto sprayed sheet, forming 12 equal cookies and leaving a space of about 2 inches between each.
8Bake until edges of cookies are lightly browned, 10 to 12 minutes; using a spatula, remove cookies to wire rack to cool.
9Repeat procedure 2 more times, spraying cookie sheet with nonstick cooking spray each time and making 24 more cookies.
