Orange cherry biscotti

Ingredients:
2 cupFlour
1 cupSugar
1 tspBaking powder
1 tspVanilla
3 Egg equivalent, or ¾c egg
-whites
2 tbspOrange juice
1 Orange zest
1 3/4 cupDried cherries
Or- currants, dried
-cranberries
Procedures:
1Recipe by: ff mailing list (susan hathaway) mixture will be thick and sticky.
2Form into two long logs on pam-sprayed cookie sheet.
3Bake for 20 minutes.
4Let cool 10 minutes or so.
5Preheat oven to 350.
6Mix (in processor is easiest): slice into cookies (as thick or as thin as you like) using sharp knife.
7Lay out on cookie sheet (same one ok) and bake 15 minutes per side.
8Let cool on rack.
9Will harden even more as cool.
