Patty ann's filled butter rings

Ingredients:
1 cupButter
1/2 cupGranulated sugar
3 cupFlour
1/2 tspSalt
1 tspVanilla extract
1 Jars Apricot preserves (or y
-favorite)
4 Sugar
Procedures:
1Recipe by: patty ann spalding cream butter and sugar until light.
2Add flour and salt.
3Chill slightly and roll 1/8" thick between wax paper sheets.
4Roll only a small amount of dough at a time.
5Using a 2 ? cookie cutter, cut cookies.
6Cut centers out of half of cookies (i use my thimble to cut centers).
7Bake all cookies on ungreased sheets at 400=b0 for 8 to 10 minutes or less, until very lightly browned.
8Cool on wire racks.
9Spread whole cookies with preserves, piled higher in center.
10Top with cookie ring.
11Sprinkle with 4x sugar.
