| 1 | Heat oven to 350 °F. |
| 2 | Have ungreased baking sheet(s) ready. |
| 3 | Combine peanut butter, maple syrup and vanilla in a large bowl, mixing until smooth. |
| 4 | Add rice flour and salt; mix well. |
| 5 | Fold in peanuts. |
| 6 | Form cookies, using 1 tablespoon dough for each. |
| 7 | Place on cookie sheet, spacing 1 inch apart. |
| 8 | Flatten gently with the tines of a fork. |
| 9 | Bake until set, 11 to 12 minutes. |
| 10 | Cool 1 minute on baking sheet, then transfer to a wire rack to cool. |
