Fiery pork & winter bamboo shoots over snow

Ingredients:
1 Large end-cut pork chop
-(OR ?lb pork butt)
1 1/4 cupSlivered winter bamboo
-shoots
1 tspMinced ginger root
2 Large garlic cloves
2 tbspPeanut oil
1/2 cupChicken stock
1 tspChili paste with garlic
1 Pinch sugar
1 1/2 cupVegetable oil
1/2 cupRice stick noodles
2 tspThin soy sauce
2 tspCornstarch
Cornstarch paste
1 tspChinese red vinegar
Procedures:
1Preparation: rinse bamboo shoots; slice & sliver to the size of thick matchsticks.
2Slice pork like bamboo & marinate in thin soy sauce & cornstarch for 10 minutes.
3Peel & slice garlic in thin rounds.
4Combine stock, chili paste & sugar.
5Deep-frying rice stick: break up rice stick before measuring.
6Heat vegetable oil in hot wok.
7When oil is medium hot, test a few pieces of rice stick: it should fry quickly to a puffy white.
8If it browns, turn down the heat.
9Fry rice sticks in very small batches.
10Spread out fried snow on serving platter, reserve in warm place.
11Stir-frying: clean wok; then reheat to very hot.
12Add peanut oil, heating until it just begins to smoke; add drained pork & stir-fry briskly for about 2 minutes.
13Add bamboo, garlic & ginger.
14Toss with pork for 1 minute.
15Re-stir liquids and add to wok.
16Cover wok, & simmer for 3 minutes.
17Remove cover; turn up heat again; boil briefly to reduce sauce; sprinkle on vinegar.
18Ladle over rice stick & serve. serves
