Ingredients:
1 medButternut squash
-- peeled and diced
2 cupEDENSOY, Original
2 canEDEN Diced Tomatoes
-- (1 can = 14.5 oz.)
1 tspSalt, or to taste
1 tbspFresh ginger (optional)
Procedures:
1Place small pieces of squash in saucepan with edensoy,.
2Simmer until squash is soft.
3Add 1 can tomatoes, puree with squash.
4Add another can of diced tomatoes, leaving in chunks.
5Heat, add salt, ginger and serve.
6Garnish with croutons and green onions.
