| cup | EDENSOY, Original | | 2
| can | EDEN Diced Tomatoes | | | -- (1 can = 14.5 oz.) | | 1
| tsp | Salt, or to taste | | 1
| tbsp | Fresh ginger (optional) |

Procedures:
| 1 | Place small pieces of squash in saucepan with edensoy,. | | 2 | Simmer until squash is soft. | | 3 | Add 1 can tomatoes, puree with squash. | | 4 | Add another can of diced tomatoes, leaving in chunks. | | 5 | Heat, add salt, ginger and serve. | | 6 | Garnish with croutons and green onions. | | 7 | Delicious and easy! prep time: 15 minutes cooking time: 30 minutes yield: 5-6 servings |
