Tortellini soup

Ingredients:
1 tbspOlive oil
1/4 cupOnion, finely chopped
1 cupMushrooms, sliced
1 eachGarlic clove, minced
14 1/4 ozCan chicken broth
2 cupWater
9 ozFresh cheese tortellini
1 cupPeas, frozen
2 tbspParsley, snipped
Procedures:
1In a large saucepan or dutch oven heat oil.
2Add onion, mushrooms and garlic.
3Cook, stirring occasionally, until onion is tender.
4Add chicken broth and water.
5Bring to a boil.
6Add tortellini and peas.
7Return to a boil and cook for 6 to 12 minutes or until tortellini is tender.
8Stir in parsley.
9Makes 8 servings.
