Ingredients:
1 2 lb piece beef tenderloin
Salt, pepper
3 tbspButter
1/2 Onion, finely chopped
2 Garlic cloves
- finely chopped
1/2 cupWhite wine
1 cup-Water
1 ozUnsweetened chocolate
1/2 lbsQueso fresco, crumbled
2 tbspChopped parsley
Procedures:
1Season beef to taste with salt and pepper.
2Fry in butter until browned.
3Add onion, garlic, wine and water.
4Cover and simmer over gentle heat about l5 minutes.
5Add chocolate and simmer, uncovered, l0 minutes longer.
6At serving time, slice meat, pour sauce over and sprinkle with cheese.
7Broil to melt cheese.
8Sprinkle with parsley.
9Makes 6 servings.
