Unicorn village's lentil chowder

Ingredients:
2 tbspOlive oil
1 cupCarrot, diced
1 cupOnion, diced
1/2 cupCelery, diced
1 tspCurry powder
1 tbspMinced garlic
1 tbspMinced fresh ginger
3 Bay leaves
2 cupCrushed tomatoes in juice
1 quartVegetable stock or water
2 cupLentils
Salt and pepper
Garlic croutons for garnish
Procedures:
1Recipe by: unicorn village, adventura, florida saute the carrot, onion, celery and spices in the olive oil for 3 to 5 minutes in a dutch oven or soup pot over medium-high heat.
2Add the crushed tomatoes, stock or water, and lentils and bring to a boil.
3Reduce heat to a simmer and cook about 1 hour, or until lentils ar softened and soup is thick.
4Season to taste with salt and pepper and serve with garlic croutons.
