Ingredients:
2 tspMARGARINE
1/2 cupCHOPPED ONION
4 cupCHICKEN BROTH
2 ea MEDIUM CARROTS, PEEL & SLICE
2 ea POTATOES, PEEL & DICE
1 cupCUT GREEN BEANS
1 tbspCHOPPED PARSLEY
1 tspTARRAGON LEAVES
1/4 tspBLACK PEPPER
40 ea FAT FREE CRACKERS
Procedures:
1In a large sauce pan, over medium heat, cook onion in margarine.
2Add chicken broth, carrots, potatoes, green beans, parsley, tarragon and pepper.
3Heat until boiling.
4Reduce heat, simmer 20 minutes or until vegetables are tender.
5Serve hot with crackers.
6Per serving = ( 1 c soup - 5 crackers) 158 calories, 226 mg sodium, 0 chol, 3 gm fat - 0 gm sat fat.
