Vegetable soup (jung)

Ingredients:
2 tbspGhee
1 tbspMinced ginger
1 tbspMinced garlic
1/2 cupOnion, diced
1/4 cupWhite flour
4 cupWater
2 cupMixed vegetables, chopped
1/2 cupChopped tomatoes
1 cupTofu, drained & diced
1/4 cupGreen onions, chopped
1 tbspTamari sauce
1/4 tspBlack pepper
Procedures:
1Melt ghee & stir-fry ginger, garlic & onion for 1 minute.
2Add flour & continue to stir fry for fro 3 to 5 minutes, till golden in colour.
3Add water a little at a time, whisking constantly to keep it smooth.
4Add vegetables, tomatoes, tofu, green onions & bring to a boil.
5Add the remaining ingredients.
6Simmer for 10 minutes.
7Thin with extra water if too thick.
8Serve hot.
