| 1 | Preheat oven to 400 deg f. |
| 2 | Put peaches in bottom of an 8 x 8 pan. |
| 3 | Bake in oven until peaches start to simmer. |
| 4 | Mix together the sugar and the 3 t of flour and sprinkle over the peaches. |
| 5 | Add melted butter. |
| 6 | Put remaining flour into a bowl; add salt and shortening and work with fingertips until mixture resembles coarse oatmeal. |
| 7 | Mix in water to form a stiff sough. |
| 8 | Roll out dough on lightly floured board into a square large enough to fit over the peaches. |
| 9 | Prick pastry with fork and bake for 35-40 minutes. |
