Rum raisin cheesecake # 2

Ingredients:
1 1/2 cupGraham cracker crumbs
1/2 cupGranulated sugar
1/2 cupMargarine, melted
Batter:
1 pintWater
1 cupRaisins
2 lbsCream cheese
1 1/2 cupGranulated sugar
3 tbspWhite rum
1 tspDark vanilla
1 tspSalt
4 Eggs
1 Egg yolk
Topping:
1 pintSour cream
1/4 cupGranulated sugar
1 tspWhite rum.
Procedures:
1Crust: crust: combine graham cracker crumbs, sugar and melted margarine until well blended.
2Press evenly into a 10" cake pan.
3Batter: plump raisins in water.
4Soften cream cheese and sugar and mix with a paddle until softened.
5Add rum, vanilla and salt.
6Mix well.
7Add eggs one at a time, and the egg yolk, mixing on low speed until blended through.
8Drain and add raisins and mix on low speed until just incorporated.
9Bake at 350 °F for 40-45 minutes.
10Remove and let cool.
11Topping: combine sour cream, sugar and rum.
12Spread over cheesecake and chill for service.
