Ingredients:
1 1/2 quartPersimmons
2 Eggs
3/4 cupSugar
1 pintSweet milk
1/2 cupButter
1 tbspGround cinnamon
1 tspNutmeg
2 1/2 cupFlour (more or less)
Procedures:
1Wash persimmons, and mash.
2Rub through a sieve.
3(larry note: i recommend using a "foley foodmill") add well beaten eggs, sugar, sweet milk, and the butter, which has been cut into small pieces, and the spices.
4Add enough flour to make a stiff batter.
5Bake in a moderately hot oven.
6Serve with whipped cream.
