Barbecued pork (cha siu)

Ingredients:
1 lbsLean Pork butt
1/4 tspSalt
Dash of pepper
1 1/4 tbspSugar
2 tspThin soy sauce
1 tspRoasting salt
1 1/2 tspOyster Sauce
1 1/2 tspHoisin sauce
2 tspWhite wine
1 tbspHoney
1 cupWater (for roasting)
Procedures:
1Cut meat into pieces approximately 5" x 2"x 1" Sprinkle meat with each of the remaining ingredients, except water, mix well, and marinate over night (or for at least 5 hours) in the refrigerator.
2Pre-heat oven at 375 degrees.
3In a roasting pan add 1 cup water.
4Place rack on top.
5Place pork on rack and roast for ?hour on each side.
6Total cooking time 1 hour.
7Baste 3 or 4 times.
8Do not cover.
9Note: barbecued pork can be frozen for 3 months or refrigerated for 1 week.
