Ingredients:

| tbsp | Soy sauce | | 1
| tbsp | Vinegar, rice | | 1 1/2
| tsp | Ginger, grated | | 2
| each | Garlic clove, minced | | 1/4
| tsp | Salt | | 1
| lbs | Turkey, ground | | 1
| cup | Rice, cooked | | 3/4
| cup | Green onion, chopped | | 2 1/2
| cup | Carrot, shredded | | 1/2
| cup | Water chestnuts, chopped | | 1
| each | Egg | | 2
| tbsp | Oil |

Procedures:
| 1 | Mix together all ingredients except 2 c. of the carrots and the oil. | | 2 | Form 12 2-inch meatballs. | | 3 | Combine remaining carrots and oil. | | 4 | Roll meatballs in carrots. | | 5 | Place in greased muffin cups, sprinkle with leftover carrots and cover with foil. | | 6 | Bake at 375 °F for 25 minutes. | | 7 | Remove foil and bake 5 more minutes until tips of carrots begin to brown. | | 8 | Let stand 5 minutes before serving. | | 9 | Makes 6 servings. |
