General tso's chix

Ingredients:
1/2 cupCornstarch
3 lbsChicken, (dark, deboned)
1/4 cup-Water
1 1/4 cupDark Soy Sauce
1 1/2 tbspGarlic, mince
1 Egg
1/2 cupSoy Sauce
1 tbspGinger, chopped
1 cupCornstarch
1/4 cupSherry
1/4 cupWhite Vinegar
1 cupSalad Oil
2 cupGreen onions, sliced
1 1/2 cupHot chicken broth
16 smallHot dried Peppers
3/4 cupSugar
Procedures:
1Sauce: mix cornstarch, and water.
2Add garlic, sugar, ginger, soy sauce, vinegar and sherry.
3Then add broth and stir until dissolved.
4Refrigerate until needed.
5In separate bowl mix chicken, soy sauce, and pepper.
6Stir in egg.
7Add cornstarch until chicken is coated evenly.
8Add oil to help separate chicken pieces.
9(do not over cook; watch temperature, stir fry or meat will toughen) drain on paper towels.
10Place a small amount of oil in wok and heat til just hot.
11Add onions and peppers and stir-fry briefly.
12Stir sauce; add to wok and cook until sauce thickens.
13Add water or water/cornstarch if needed.
14Serve with rice.
