Ingredients:

| tsp | Chinese sesame oil | | 1 1/2
| lbs | Very lean ground pork | | 4
| tbsp | Ginger grated coarse | | 2
| large | Cloves minced garlic | | 2
| tsp | To 4 ts hot chili sauce | | | -with garlic | | 4
| tsp | Reduced sodium soy sauce | | 4
| tbsp | Dry sherry | | 3
| tbsp | Hoisin sauce | | 1 1/2
| cup | Chicken stock | | 4
| | Chopped scallions |

Procedures:
| 1 | Cook noodles according to package directions. | | 2 | Heat sesame oil in wok or skillet and brown pork. | | 3 | Stir in ginger and garlic; saute 30 seconds, stirring. | | 4 | Reduce heat and add chili sauce, soy sauce, sherry and hoisin sauce; mix thoroughly. | | 5 | Add chicken stock; raise heat and cook quickly to reduce liquid. | | 6 | Remove from heat, stir in scallions and mix thoroughly with noodles. | | 7 | Let stand, covered, 30 minutes to blend flavors. | | 8 | Stir occasionally. |
