Ingredients:
2 Eggs -- separated
1 cupSugar
1/2 cupMargarine -- softened
1/4 tspSalt
1 tspVanilla
1 1/2 cupFlour -- sifted
1 tbspFlour -- to coat berries
1 tspBaking powder
1/3 cupMilk
1 1/2 cupFresh blueberries
Cinnamon sugar -- for
Topping
Procedures:
1Preheat oven to 350^.
2Beat egg whites until stiff.
3Beat in ?cup of sugar.
4In another bowl, cream margarine; add salt, vanilla, and remaining sugar gradually.
5Add egg yolks and beat until creamy.
6Sift flour with baking powder.
7Add alternately to creamed mixture with milk.
8Fold in beaten egg whites.
9Coat the blueberries with 1 tablespoon of flour and then fold into mixture.
10Turn into 8x8 inch pan.
11Sprinkle cinnamon sugar on top.
12Bake in 350^ oven for 50 minutes.
13Cool on rack.
14Wrap any leftovers and store in refrigerator.
15May be frozen.
