Ingredients:
3 lbsPeaches
3 lbsPears
1 1/2 lbsSeedless green grapes
-(slightly underripe)
10 ozJar of maraschino cherries
3 cupSugar
4 cupWater
Procedures:
1Yield: about 6 pints
2procedure: stem and wash grapes, and keep in ascorbic acid solution (see "ensuring high-quality canned foods").
3Dip ripe but firm peaches, a few at a time, in boiling water for 1 to 1-?minutes to loosen skins.
4Dip in cold water and slip off skins.
5Cut in half, remove pits, cut into ?inch cubes and keep in solution with grapes.
6Peel, halve, and core pears.
7Cut into ?inch cubes, and keep in solution with grapes and peaches.
8Combine sugar and water in a saucepan and bring to boil.
9Drain mixed fruit.
10Add ?cup of hot syrup to each jar then add a few cherries and gently fill the jar with mixed fruit and more hot syrup, leaving ?inch headspace.
11adjust lids and process according to the recommendations in table 1.
