| | Frog legs -- cleaned | | 1
| small | Can evaporated milk | | 1
| tbsp | Baking powder | | 1
| cup | All-purpose flour | | | Salt and pepper -- to taste | | | (6 to 8) | | 2
| | Eggs | | 2
| tbsp | Vinegar | | | Cayenne pepper -- to taste |

Procedures:
| 1 | Beat eggs, add evaporated milk, baking powder and vinegar. | | 2 | Add salt and peppers and mix well. | | 3 | Put frog legs into mixture and marinate for at least 1 hour. | | 4 | Remove frog legs and season. | | 5 | Dip frog legs into flour, covering completely, then fry in 380°Fat. | | 6 | Cook until golden brown, about 10 minutes. | | 7 | Serves 3-Festival: rayne frog festival; tba, 1995 |
