Ingredients:
2 tbspOil
2 Garlic cloves, minced
1 largeOnion, chopped
2 Stalks celery, chopped
3 cupTomato juice
3 cupWater
1 canTomato sauce (8 oz.)
2 Bay leaves
1/2 tspOregano
1/2 tspBasil
1/2 tspGarlic salt
1/2 tspCoarse black pepper
3 cupPrecooked beans
1 tspSalt (less if beans are
-salty)
1 cupSm. whole wheat shells or
-macaroni
1 cupFresh spinach, shredded
Parmesan cheese, grated
Procedures:
1Using 5 quart pot, heat oil and saute garlic, onion, and celery for 5 minutes.
2Add tomato juice, water, tomato sauce, beans, bay leaves, oregano, basil, garlic salt, and pepper, adjusting seasonings to taste.
3Bring to a boil, cover and simmer 10 minutes.
4Add pasta; cover and simmer 10 minutes.
5Add spinach and simmer 5 minutes.
6Serve with cheese at table.
7Makes 2 quarts.
