Pear almond soup

Ingredients:
1/4 cupCooking oil
1/2 cupMinced onion
1/2 cupMinced celery
4 Pears, peel/seed/core
1/2 cupBlanched almonds
1/2 cupPear brandy or sherry
4 cupVegetable stock
1 tbspFresh thyme
1 tbspFresh sage
Salt and pepper, to taste
Procedures:
1Heat oil in a wide pot and add onion and celery.
2Cook over medium heat, stirring occasionally, until onion begins to brown.
3Add pears and almonds and cook together lightly, about 3 minutes.
4Add brandy or sherry and cook about 3 minutes to allow alcohol to evaporate.
5Add stock, herbs, salt and pepper.
6Cook 40 minutes on medium heat.
7Set aside to cool.
8Transfer mixture to blender or food processor and blend well.
9Strain mixture back into saucepan and reheat, tasting and seasoning as necessary.
10Serve hot.
