Peach ice creamving

Ingredients:
3 -4 large ripe peaches
-sliced but not peeled
1 tbspFresh lemon juice
1/4 cupGranulated sugar
1/2 cupMilk
1/2 tspVanilla extract
1 largeEgg
1 largeEgg yolk
1 cupPlus 1 T heavy cream
Fresh mint sprigs for
-garnish
Procedures:
1Combine peaches, lemon juice, and ?c sugar in a nonreactive bowl.
2Let sit for 2 hours, covered.
3Stir occasionally.
4(if desired, reserve ?c of peach mixture to use in ice-cream sodas; separate recipe follows).
5Lightly mash peaches with potato masher.
6Stir in milk and vanilla; let stand for ?hour.
7Using an electric mixer, beat egg and egg yolk at high speed until light in color.
8Gradually add the remaining ?c sugar, beating until incorporated.
9Lower speed and add cream, then peach mixture; mix to blend.
10Pour into ice-cream maker and freeze according to manufacturer"s instructions.
11(if using a hand-cranked ice-cream maker, first chill shell of the machine for 24 hours in the freezer).
12Serve in goblets, garnished with fresh mint sprigs.
