Ingredients:
1 cupGreen Onions/Tops, Sliced
32 ozPinto Beans, *
1 cupTomato, Chopped, 1 Lg.
1/2 lbsChorizo Sausage, Bulk
3 Poblano Chiles, Roasted, **
1/4 tspSalt
Procedures:
1* use 2 16-oz cans of pinto beans.
2Drain one and leave one undrained.
3** use small poblano chiles and refer to sowest 1 on how to roast, and seed them.
4Chop them into small pieces when you are done roasting them.
5Heat the oven to 350 °F.
6Cook and stir the onions and sausage together until the sausage is done.
7Drain of excess fat.
8Mix the sausage mixture and remaining ingredients in an ungreased 2-quart casserole.
9Bake uncovered until hot and bubbly. serve
