Ingredients:
Non-stick spray coating
2/3 cupSugar
1/2 cupPacked brown sugar
1/4 cupVegetable oil
3 Egg whites
2/3 cupAll-purpose flour
2/3 cupWhole wheat flour
1/2 cupOat bran
1 1/2 tspBaking soda
1 tspGround cinnamon
1/4 tspGround nutmeg
3 cupShredded unpeeled apples
Powdered sugar
Procedures:
1From western new york apple growers association
2spray a 13x9x2" baking pan with non-stick coating and set aside.
3In a large mixing bowl combine sugars, oil and egg whites.
4Beat with a wooden spoon until well blended.
5Add flours, oat bran, baking soda, cinnamon and nutmeg; stir until just moistened.
6Stir in shredded apples.
7Pour batter into prepared pan.
8Bake in a 350°F.
9Oven for 25-30 minutes.
10Cool, if desired, sift powdered sugar over cake.
11makes 16 servings.
