Quick tomato & basil soup

Ingredients:
2 tbspOlive oil
2 largeGarlic clove, flattened
2 lbsTomato, ripe, peeled, seeded
-& chopped
3 Basil sprig, fresh
Salt & pepper, to taste
2 sliceItalian bread , ? thick
-toasted
Extra-virgin olive oil
Julienne of fresh basil
Procedures:
1Heat 2 tablespoons oil in heavy large saucepan over medium-low heat.
2Add garlic and cook until beginning to color, about 5 minutes.
3Remove garlic and reserve.
4Add tomatoes and basil sprigs to saucepan.
5Reduce heat and simmer until soup thickens to chunky puree, mashing tomatoes with spoon, about 15 minutes.
6Season soup generously with salt and pepper.
7brush toast with oil, rub with reserved garlic and sprinkle with salt and pepper.
8Discard basil sprigs.
9Ladle soup into bowls.
10Drizzle with oil.
11Top each with toast and basil julienne.
