Ingredients:
1 tspWhole or ground allspice
1 tspCardamom seeds
1 Stick cinnamon
1 tspCoriander seeds
1 tspCumin seeds
1 tspBlade or ground mace
1/2 tspCayenne pepper
1/2 tspWhole cloves
1 tspGround ginger
1 tspPeppercorns
1-inch piece of galangal
-(opt.)
Piece of long pepper (opt.)
1 tspCubebs (opt.)
1 tspGrains of paradise (opt.)
Procedures:
1Place allspice, cardamom seeds, cinnamon, and coriander and cumin seeds together in a saute pan over medium heat nd dry-roast, shaking pan often, until they give off an aroma, about 5 minutes.
2Combine all ingredients in a mortar or a clean coffee grinder and grind to a powder.
3Store in an airtight container.
