Rice and radicchio soup

Ingredients:
1 tbspOlive oil
1 cupOnions, chopped
1 tspGarlic, chopped
1 1/2 quartChick
Salt and pepper
1 1/2 cupCooked rice, , rinsed
1 smallRadicchio -, thin strips
3 ozJulienned prosciutto
1 tbspF resh sage chopped
1/2 cupParmesan cheese grated
Procedures:
1Recipe by: essence of emeril show in a medium soup pot, heat the oil until very hot.
2Add the onion and cook, stirring constantly for 4 minutes.
3Add the garlic and cook for 1 minute.
4Add the stock, bring to a boil, reduce heat and simmer for 20 minutes.
5Add the rice and simmer for 3 more minutes.
6Season to taste with salt and pepper.
7Remove from the heat.
8To serve, place ?cup radicchio 1 tablespoon prosciutto, ?teaspoon sage, and 1 tablespoon parmesan cheese into each of your soup bowls.
9Then ladle the hot soup over the garnishes.
