Garlic-mushroom stuffed sirloin

Ingredients:
3 lbsBeef Top Sirloin Steak
-(boneless), cut 2" thick
1 tbspOlive oil
1 cupMinced fresh mushrooms
- (approx. 3 oz.)
1/4 cupGarlic cloves
-- finely chopped
1/2 cupThinly sliced green onions
1 tbspDry red wine
1/4 tspSalt
1/4 tspDried thyme leaves
1/4 tspPepper
Procedures:
1Heat oil in nonstick skillet over medium heat.
2Add mushrooms, garlic, and green onions; cook 4 min. or until tender, stirring occasionally.
3Add wine and cook until evaporated.
4Stir in salt, thyme and pepper.
5Remove from heat; cool.
6Make a horizontal cut through center approximately ?inch from each side, parallel to surface of steak, to form a pocket.
7Cut to, but not through opposite side.
8Spoon stuffing into pocket, spreading evenly.
9Close opening with toothpicks.
10Roast sirloin in a 350 °F oven on a rack in a shallow roasting pan for one hour or 20 min. per pound.
11Remove steak from oven and let stand 10-15 min. covered with foil tent.
12Remove toothpicks and carve into ?inch thick slices.
13Serving suggestion: mashed potatoes and glazed carrots.
14Serves 8 to 10.
