Procedures:
| 1 | Wash, core and quarter apples (do not peel). | | 2 | Combine apples and juice in lightly oiled crock-pot. | | 3 | For each pint of sieved cooked fruit, add 1 c. sugar, 1 tsp. cinnamon, ?tsp. allspice and ?tsp. cloves; stir well. | | 4 | Cover and cook on high setting for 6 to 8 hours, stirring about every 2 hours. | | 5 | Remove cover after 3 hrs. | | 6 | To allow fruit and juice to cook down. | | 7 | Add sauterne for the last hour of cooking. | | 8 | Spoon into hot sterilized jars and process in boiling water bath; seal. | | 9 | Makes about 5 (?pint) jars. |
