Ingredients:
4 cupBeef broth
2 Cloves garlic, minced
28 ozCan Tomato Puree
1 1/2 cupOnions, chopped
1 1/2 cupGreen pepper, chopped
1 tbspOregano chopped
1 tbspParsley Chopped
1 tbspBasil Chopped
3 lbsHot Italian Sausage 1"chunks
Parmesan Cheese
Rotelli Macaroni
1 cupRed Wine
1 cupCelery with tops chopped
Procedures:
1Cook the sausage in a large soup pot.
2Brown well on all sides.
3Remove the meat and reserve enough fat to saute the onions, pepper, celery and garlic.
4Saute until the onions are translucent.
5Add the meat and the rest of the ingredients except the cheese and macaroni.
6Simmer about 1 hour and serve with cooked rotelli and parmesan cheese.
