Ingredients:
2 Whole chicken breasts
1 Green onion
MARINADE
2 Slices ginger
1/4 tbspSalt
4 Dried red peppers
1 tbspSoy sauce
SAUCE
1 tbspCornstarch
1 1/2 tbspRice wine
3 tbspOil
1 tbspSoy sauce
2 tbspFresh orange peel
1 tbspRed wine vinegar
2 1/2 tbspSugar
Procedures:
1Preparation: cut chicken into ? pieces.
2Mix marinade.
3Add chicken.
4Marinate 30 minutes.
5Shred orange peel.
6Fine chop green onion.
7Mince ginger.
8Mix sauce.
9Cooking: heat 2 tbs oil in wok over high heat.
10Stir-fry chicken 2-3 minutes until white and firm.
11Remove.
12Wipe wok clean.
13Heat 1 tbs oil over high heat.
14Stir-fry dried peppers until dark red.
15Reduce temperature to medium.
16Stir-fry orange peel; green onion and ginger until aroma comes.
17About 1 minute.
18Raise temperature to high.
19Add sauce.
20Bring to boil.
21Return chicken to wok.
22Stir-fry until well mixed and heated through.
