Ingredients:

| tbsp | Chopped chives | | 2
| tbsp | Minced chervil | | 2
| tbsp | Minced sorrel | | 1/2
| tsp | Finely cut tarragon | | 1
| cup | Finely chopped celery | | 4
| cup | Chicken broth | | | Salt and pepper to taste | | | Sprinkle sugar | | 6
| | Slices white toast | | | Dash nutmeg | | | Grated cheddar cheese |

Procedures:
| 1 | Melt butter in skillet, then add herbs and celery and simmer for 3 minutes. | | 2 | Add broth and seasonings. | | 3 | Cook gently for 20 minutes. | | 4 | Place sliceds of toast in tureen and pour soup over them. | | 5 | Add nutmeg and sprinkle with grated cheese. | | 6 | Serve very hot. | | 7 | Makes 4-6 servings. |
