Orange flavoured risotto

Ingredients:
1 medOnion, chopped
2 tbspVegetable oil
1 cupBrown rice
4 cupVegetable stock
1 lbsFirm tofu, cut into strips
1 smallCan water chestnuts, drained
-- rinsed & thinly sliced
1/2 cupRaisins
2 tspTamari
1 ea Orange, juiced & rind grated
1 dashCinnamon
2 tbspParsley, chopped
Salt & pepper, to taste
4 tbspCashews
Procedures:
1Saute the onion in the oil over moderate heat for 2 to 3 minutes, stiring occasionally.
2Stir in the rice & cook for 1 minute.
3Pour in the stock, cover & bring to a boil.
4Reduce heat & simmer for 40 minutes.
5while the rice is cooking, mix together the tofu strips, water chestnuts, raisins, tamari, orange rind & juice.
6Add the cinnamon & parsley.
7Set aside.
8when the rice has cooked, stir in the tofu mixture & gently heat through.
9Season with salt & pepper.
10Serve hot garnished with the nuts.
