Generic chili recipe

Ingredients:
2 tbspOil
2 lbsChili meat *
1 largeOnion, chopped med.
2 clGarlic, minced
2 tspCumin
2 tbspChili powder
3 cupCanned tomatoes, w/joice
12 ozBeer **
Salt/pepper to taste
Procedures:
1Heat the oil (your choice of low-smoke type) in a heavy pot over medium-high heat.
2Add meat, onion and garlic, cook until browned.
3Add cumin, chili powder, salt and pepper and stir to blend.
4Coarsely chop tomatoes and add to meat with the juice.
5Stir in beer.
6Simmer over low heat, uncovered for 1-2 hours, adding more beer or water as necessary.
7* if chili meat not available, use stew or soup meat.
8** some prefer flat beer for recipe instead of fresh.
