Oven-baked buttermilk chicken

Ingredients:
1 eachEnv. Golden Onion Soup Mix
2 eachLarge Eggs
3 lbsChicken Cut into Serving Pcs
1 cupUnbleached All-purpose Flour
1/2 cupButtermilk *
1/4 cupMargarine or Butter, Melted
Procedures:
1* substitution: blend 1 ?t lemon juice with enough milk to equal ?cup; let stand 5 minutes.
2Preheat oven to 425 °F.
3Combine golden onion recipe soup mix with flour; set aside.
4Beat eggs with buttermilk.
5Dip chicken pieces in buttermilk mixture, then flour mixture, coating well.
6Place in large shallow baking pan, on rack, and chill 30 minutes.
7Drizzle with butter, then bake 45 minutes or until well done.
8Note: this is a great recipe for picnics or just eating on the patio.
