Oven fried pecan cornmeal chicken

Ingredients:
2 lbsChicken breast
1 cupVegetable oil
3 tbspDijon mustard
1/2 tspSalt
1/4 tspBlack pepper
1/2 tspPaprika
1 cupFinely ground pecans
1/2 cupYellow cornmeal
Procedures:
1Heat the oven to 400°F.
2Pound the chicken breast halves to an even thickness.
3Pour ?cup of the oil into a 9-by-13-inch baking dish, and heat it in the hot oven for 10 minutes.
4Combine the remaining oil with the mustard, salt, pepper and paprika in a shallow bowl, and mix well.
5Combine the pecans and cornmeal on a sheet of wax paper.
6Dip the chicken pieces in the seasoned oil, and then in the nut mixture.
7Remove the pan from the oven, and place the chicken pieces in the pan.
8Bake for 10 minutes, then turn with tongs, and bake for an additional 15 minutes.
9Drain on paper towels, and serve immediately.
10Serves 4 to 6.
