Panda express orange chicken

Ingredients:
2 lbsBoneless chicken pieces
-skinned
1 eachEgg
1 1/2 tspSalt
White pepper
Oil
1/2 cupPlus 1 Tbsp cornstarch
1/4 cupFlour
1 tbspMinced ginger root
1 tspMinced garlic
Ds Crushed hot red chiles
1/4 cupChopped green onions
1 tbspRice wine
Orange Chicken Sauce
1/4 cupWater
1/2 eachTo 1 tsp sesame oil
Procedures:
1Cut chicken pieces into 2-inch squares and place in large bowl.
2Stir in egg, salt, pepper, and 1 tbsp oil and mix well.
3Stir cornstarch and flour together.
4Add chicken pieces, stirring to coat.
5Heat oil for deep-frying in wok or deep-fryer to 375 degrees.
6Add chicken pieces, small batch at time, and fry 3 to 4 minutes or until golden and crisp.
7(do not overcook or chicken will be tough).
8Remove chicken from oil with slotted spoon and drain on paper towels.
9Set aside.
10Clean wok and heat 15 seconds over high heat.
11Add 1 tbsp oil.
12Add ginger and garlic and stir-fry until fragrant.
13Add and stir-fry crushed chiles and green onions.
14Add rice wine and stir 3 seconds.
15Add orange sauce and bring to boil.
16Add cooked chicken, stirring until well mixed.
17Stir water into remaining 1 tbsp cornstarch until smooth.
18Add to chickn and heat until sauce is thickened.
19Stir in 1 tbsp oil and sesame oil.
20Serve at once.
