Ingredients:

| lbs | Fresh or frozen rhubarb | | | - cut in 1-in pieces | | 1
| cup | Orange juice | | 1/4
| cup | Sugar | | 1
| | Orange (zest only) |

Procedures:
| 1 | This is very good served with roast duck or pork. | | 2 | Simmer the rhubarb and the orange juice with ?the zest for 15 minutes, uncovered. | | 3 | Add the sugar and cook 15 minutes more. | | 4 | This will keep several days in refrigerator, or may be frozen. | | 5 | Top with the remaining zest before serving. | | 6 | Makes 2 cup |
