Pasta with chicken in pineapple juice

Ingredients:
8 ozMostaccioli or Rigatoni
-OR other medium pasta
-shape, uncooked
1 lbsChicken breasts, cooked
-(boneless, skinless)
1/8 tspCayenne pepper
2 bunchScallions
- cut in 1-inch diagonals
1 1/2 cupPineapple juice
1 tbspGrated fresh ginger
1 tbspHoney
1 tbspLemon juice
1 tbspButter or margarine
1 tbspChopped cilantro
1 Can mandarin oranges
- drained
Procedures:
1Preheat oven to 350 °F.
2Brush chicken with oil and season with cayenne pepper.
3Bake until cooked through, about 30 minutes.
4During the last 2 to 3 minutes, place the scallions in the pan.
5Remove from oven, cool slightly and cut the chicken into bite-sized pieces.
6Reserve the scallions.
7Prepare pasta according to package directions.
8While pasta is cooking, combine pineapple juice, ginger and honey in a small saucepan.
9Bring to a boil over medium-high heat and cook until reduced by half, about 20 minutes.
10Add lemon juice.
11Remove from heat and whisk in the butter or margarine.
12Toss together the pasta, chicken, scallions, mandarin oranges and sauce.
13Garnish with cilantro and serve.
14Each serving provides: 382 calories; 39 g protein; 36.2 g carbohydrates; 8.5 g fat; 96.4 mg cholesterol; 114 mg sodium.
