Perfect poached chicken-dam

Ingredients:
2 quartWater
1 ea Carrot, cut up
1 ea Onion, cut up
1 ea Stalk celery, cut up
3 ea Whole peppercorns
2 ea Whole cloves
2 ea Sprigs parsley
4 ea Chicken breasts
Procedures:
1Bring 2 quarts water to boil in large saucepan.
2Add carrot, onion, celery, peppercorns, cloves and parsley.
3Add chicken breasts.
4Bring to boil again.
5Cover tightly, reduce heat to low and cook without lifting lid for 15 minutes.
6Turn off heat and allow to cool in cooking liquid.
7Keep covered.
8Lift chicken from liquid, remove bones and skin and use as directed in recipe.
9If desired, return bones to saucepan and bring liquid to boil again.
10Cover, reduce heat and let simmer 3-4 hours.
11Cool.
12To complete follow steps 3-7 of perfect chicken stock recipe.
