Ingredients:
Non-stick cooking spray
1 2/3 cupFlour
2/3 cupSugar
1/4 cupNonfat dry milk
1 tspBaking soda
1/2 tspBaking powder
1/2 tspSalt
2 tspPumpkin pie spice
1/2 cupRaisins
2 Egg whites
1 cupCanned solid-pack pumpkin
1/3 cupCorn syrup, light or dark
1/3 cupOrange juice
FAT-FREE CREAM SAUCE
1 cupNonfat vanilla yogurt
1/2 cupConfectioners' sugar
Procedures:
1Spray 9-inch square baking pan with cooking spray.
2In large bowl combine dry ingredients; stir until smooth.
3Pour into prepared pan.
4Bake in 350 °F oven 35 minutes or until toothpick inserted in center comes out clean.
5Cool in pan on wire rack.
6If desired, serve with fat-free yogurt cream sauce.
7Each serving (without sauce) provides: 0 g total fat, 0 mg cholesterol, 130 calories, 3 g protein, 29 g carbohydrate, 150 mg sodium fat-free yogurt cream sauce: line a strainer with paper coffee filter or cheesecloth layers.
8Add yogurt, set over bowl and refrigerate 4 hours.
9Discard drained liquid.
10Combine thickened yogurt and sifted confectioners" sugar; stir until smooth.
