Ingredients:
10 lbs"boiling" potatoes
Salt
8 cupGarlic and mustard sauce
5 ozButter
1 cupAll-purpose flour
6 1/2 cupHot milk
Salt and freshly ground
-pepper
1 pinchNutmeg
2 largeCloves of garlic, pureed
1/4 cupDijon-type prepared mustard
1/2 tspThyme or sage
4 cupCoarsely grated cheese *
1 1/2 quartTo 2 qts cooked ham **
Procedures:
1* swiss or a mixture such as swiss, mozzarella, jack, and/or cheddar [i actually used all four kinds.
