Greek-style meat sauce

Ingredients:
4 lbsGround beef chuck
2 tbspOlive oil
4 Onions, med, finely chopped
4 canTomato paste (6 oz ea)
4 Garlic cloves, minced
1 tspMixed pickling spice
1 cupDry white wine
1 tbspSalt
Freshly ground pepper
Procedures:
1Using a large frying pan, brown meat in 1 tablespoon olive oil until it loses its pink color.
2Transfer to crockery pot.
3Add remaining olive oil to pan.
4Saute` onions until glazed.
5Transfer to crockery pot.
6Add tomato paste, garlic, pickling spice, (put in a tea ball or tie in a cheesecloth bag), wine, salt, and pepper.
7Cover.
8Cook on low 8 hours.
9Stir once or twice.
10Cool slightly.
11Ladle into freezer containers, or serve hot.
12Makes about 3 quarts.
13Note: this meat sauce is great for various dishes: spaghetti, moussaka, and the greek mararoni dish, pastitsio.
14It is also good spooned over tacos or ladled inside avocado half shells.
15This recipe makes a large quantity and freezes well.
