Grilled chicken dijonnais

Ingredients:
1/2 cupOil
1/4 cupFresh lemon juice
1/2 tbspGround pepper
6 Chicken breasts halves
3 tbspTarragon vinegar
Skinned and boned
2 tbspDry white wine
1 tbspDried tarragon
1/2 tbspWhite pepper
1 cupButter
2 tbspStrong dijon mustard
Emon slices parsley
Procedures:
1Combine oil, lemon juice and pepper in shallow dish.
2Swirl chicken in mixture to coat.
3Cover with plastic wrap and marinade in frig 30 minutes.
4Meanwhile combine vinegar and wine in heavy small sauce pan and boil over medium high heat until liquid is reduced to about 2 tablespoons.
5Remove from heat and add tarragon and pepper.
6Whisk in butter on tablespoon at a time blending thoroughly after each addition.
7Place over low heat and continue whisking until sauce has thickened slightly.
8Whisk in mustard.
9Set aside and keep warm.
10Prepare charcoal grill.
11Drain chicken well.
12Grill three to four minutes on each side.
13Arrange on heated platter.
14Garnish with lemon slices and parsley.
15Serve warm sauce separately
