| x | BONED, SKINNED, AND BUTTERFL | | 1/2
| cup | OLIVE OIL | | 1
| each | LEMON, JUICED | | 2
| tbsp | HERBES DE PROVENCE |

Procedures:
| 1 | Saute rice with oil in a heavy skillet until it is opaque. | | 2 | Add water, with salt if desired. | | 3 | Cover and cook over low heat until done--about 20 minutes. | | 4 | Cool. | | 5 | Add vegetables, pine nuts, and olives. | | 6 | Include other items if you wish: thinly sliced hard salami or artichoke hearts. | | 7 | Toss with dressing. | | 8 | Dressing: blend garlic, anchovies, herbs, lemon juice, oil and vinegar. | | 9 | Add salt and pepper to taste |
